I checked this book out from my local library, and when it is time to return the book, I will definitely buy my own copy!
This cookbook is brilliantly devised. First of all, the recipes are divided into seasons, which is useful because there are no braising recipes in the summer, no grilling recipes in the winter, and so forth. Also, the seasonal recipes call for ingredients that are in season (and therefore cheaper and tastier!), so in summer you see lots of tomato and corn recipes, while in fall you see root vegetables and pork. There are 101 recipes for each season, which is a large enough number that most people will find many dishes they like for each season.
The recipes are not written in the traditional way. They read more like a paragraph, which is brilliant because it is the exact sort of "recipe" you would get if you asked your mother or grandmother how to cook something. You basically just need to read the recipe once, and you will immediately understand how to make the dish. There are no ingredient lists at the start of the recipes, but this is not a problem because the recipes use few ingredients, and the vast majority of the ingredients are very simple, common ones. This does not mean that the recipes are uninspired, however! I made the Tuna Tabbouleh last night, and I never would have thought of putting canned tuna in oil into tabbouleh salad, but it was absolutely delicious, refreshing, and it did not heat up my kitchen (it is summer now).
A brief word of warning, however: This cookbook is probably not very good for cooks who are just beginning to learn how to cook. Mark Bittman states this on the first couple of pages of the book. This is because it contains the sort of recipes that call for a "splash of this, a pinch of that, lots and lots of these", etc. A beginner cook might not do well with these loosey-goosey instructions. A better cookbook for a beginner would be "How to Cook Everything." |

| I would have paid twice the amount for this book! The recipes are great and practical and the book is organized several different ways, not just one index. Very good book! |

Being raised in a family where most meals involve food from cans or boxes, I started my adult life with a real handicap in the kitchen. Mark Bittman helped me overcome it. I already owned "How to Cook Everything" and turn to it frequently. This book, however, fills a real need in our lives: how to eat well on weeknights with a baby pulling at my legs as I prepare dinner.
I love the paragraph style recipes. I have enough common sense to know how much chicken, onions or garlic to start with, and Mark knows that. I usually ignore given amounts in recipes anyway, so this approach just makes sense for me.
I love the flavors. I have cooked at least 20 recipes from this book and they have all been both quick and delicious.
I do not love the layout. The arranging recipes by seasons is a nice idea but in the end, lots of the recipes in the book are all-season recipes that a reader might miss out on if they only browsed the current season. This is a small complaint, however, because the index is comprehensive.
I have Mark Bittman to thank for teaching me broiling, braising and how to cook seafood. Thanks Mark!

| This is a GREAT cookbook. The recipes are written in paragraph form instead of the standard form and somehow this makes recipes way easier. Bittman has a knack for helping you LEARN to cook instead of just making a recipe, because he is always giving tips on things you can substitute or other things you can try. I find myself coming up with my own dishes based on his. This is a great way to add variety into my everyday diet - plus I always love his whole food approach to cooking. Great cookbook! |
