In this two chef household, we've used silicone sheets for years. I have used another brand but wanted to have a few extra so that when I am baking, even if I don't have extra cookie sheets, I can put all my dough on these then just slide them on the pan when I take another batch out of the oven.
I have been making lots of whoopie pies and cookies lately and it's exceptional how silicone sheets work. I like these since they are a bit thinner than my former silicone sheets. Items come off your cookie sheets so easy that you can literally lift up a cookie without a spatula..just pick it up with your hands. No spraying with cooking spray, no cookie sheets to watch afterwards...just run under water to remove any crumbs.
For us there have been no drawbacks. Cookies spread the same, taste the same, but remove more easily so I have 6 silicone sheets I keep on hand. These fit a typical sized cookie sheet. |

| Love the Matfer Exopat! Was paranoid about something resembling plastic in the oven as I try to minimize plastics with food, especially hot food, but after researching the product I couldn't find any reason not to use it. I am very impressed with how food turns out (cookies, meatballs, baked sweet potato fries) and how easy it is to clean!! Seems to really help things cook evenly and I can't imagine going back to parchment paper. I will be buying these as gifts for bakers this year. |

| I bake constantly and I like this product, though it is expensive. However compared with the cost of parchment paper, it's a toss. Personal preference really. This item lasts and lasts! Just keep it clean in between bakings. |

| One of my favorite things to do is bake. I was always checking if you had to grease the cookie sheets when baking cookies. I bought exopat and could not belive you just put the dough on baking mat which is placed on the cookie sheet. You never have to worry about cookies sticking to the cookie sheet again. If you have two mats you can bake one and be putting cookies on the other mat. When the first batch is done you can slide the mat onto a rack and put the second mat on the same cookie sheet and bake them. Even burnt cookies do not stick. The mat is easy to wash. The cookie sheet just have to be rinsed and put away. |
